Sweet Pumpkin Waffles
How to make
I really love this recipe. The pumpkin brings a sweet touch like nothing else. Also, it's really easy to make and with simple ingredients.
Start by making a quick purée with the pumpkin. (I steam them as I find it very easy and it cooks in about 15min) Roughly mash it with a fork and let it cool down while you make the batter. Whisk the eggs with the sugar, milk and butter. Then add the flour, baking powder and cinnamon. Mix together the pumpkin purée with the batter. I used a blender so it was perfectly mixed. Cook your waffles for about 5min in a waffle maker. I don't like them too sweet, but fell free to add some maple syrup and almond butter on the top ! ENJOY !
1/2 organic pumpkin
250ml of almond milk (or any plant based milk)
30g melted butter (or coconut oil)
1 tsp of cinnamon
1 tsp baking powder
