Lacto fermented carrots with elderflower blossom

Introduction

Lacto fermented carrots with elderflower blossom

How to make

Spring carrots and elderflower are the best combination ever in this season !

Lacto-fermented veggies are packed with natural probiotic feeding your gut and boost your immunity.

Wash the carrots under water, peel them, and cut them into ¼'s lengthways.
Make sure to wash your glass jar and utensils properly to avoid any unwanted bacteria.
Add the carrots sticks standing up straight and tight.
Make a brine at 2% (20g salt for 1litre water )
Pour the water out into a bowl and mix until the sea salt is fully dissolved.
Fill up your jar with this brine so the carrots are fully covered.
Then add some garlic, ginger, black peppercorns, mustard seeds and the elderflower blossom.
Leave your jar at room temperature but out of direct sunlight for 10 days to 2weeks (or until you are happy with their taste.)
Place a small plate under the jar in case it leaks a bit and make sure to let out gas every 3 days.
Then place in the fridge and enjoy whenever 🥰
