How to make
Crumble the fresh yeast into the warm milk.
Then, pour it into the bowl of a kneading machine (kitchenAid, kenwood etc…), add the eggs, sugar and salt and incorporate the flour slowly.
Knead the dough for about 10 min or until the dough is soft and smooth. Then add the butter and continue the knead for another 5min
(you can also do this process by hands but it can be a bit longer).
When your dough is smooth and beautiful, let it rest in a warm place for 1h30 covered with a cloth.
Cut the dough in 6 equal parts and try to make some nice round balls. Put them on parchment paper covered with a cloth and wait another 1h30.
Preheat your oven at 210 degrees C with a container of water to create some steam in the oven.
Whisk the remaining egg and paint your little buns with it to make them shine and sparkle with some sesame seeds.
Bake the buns for 15min and let them cool down on an oven rack.
Green veggi burgers
Start with blanching the frozen peas in boiling water for a few minutes.
In the bowl of a food processor, put all the ingredients except the peas and blend well. Then add the peas and blend again. You can blend until perfectly smooth or keep some little pieces. (That’s what I do ;) )
Take this mixture with your hands and form 6 veggie steaks. Put it in the fridge to let them harden a bit for about 1h.
Topping & assembling
Mix roughly together the feta cheese, Greek yogurt, fresh herbs, salt and pepper. Cut the buns in 2. Cook the peas steaks on a pan for 5min on each side. Dispose the peas burgers on the bottom of the buns, add the feta cream, some fresh rocket or salad and close with the second part of the bun.
ENJOY !!! Optional tip : toast the buns after cutting them in half on a pan with some olive oil or butter it makes them taste even better !
320g all purpose flour
125g butter at room temperature
100ml warm milk
12g fresh yeast
1 tsp sugar
1 tsp salt
1 egg (to make the top of the bun shine)
some sesame seeds
For the veggies burgers
350g frozen green peas (blanched in boiling water for a few minutes)
1 red onion
120g of breadcrumbs
2 garlic cloves
25g of parmesan
2 tbsp olive oil
Some chopped fresh mint salt & pepper
For the topping :
4-5 tbsp of greek yogurt
200g of feta cheese
Any fresh herbs you like chopped
Fresh rocket or any salad you like
Salt and pepper
