How to make

Method

Crumble the fresh yeast into the warm milk. Then, pour it into the bowl of a kneading machine (kitchenAid, kenwood etc…), add the eggs, sugar and salt and incorporate the flour slowly.


Knead the dough for about 10 min or until the dough is soft and smooth. Then add the butter and continue the knead for another 5min. (You can also do this process by hands but it can be a bit longer.)

It's seems buttery at first, bit it's normal, continue kneading.


When your dough is smooth and beautiful, let it rest in a warm place for 1h30 covered with a cloth.


Cut the dough in 6 equal parts and try to make some nice round balls. Put them on parchment paper covered with a cloth and wait another 1h30.


Preheat your oven at 210 degrees C with a container of water to create some steam in the oven.


Wisk the remaining egg and paint your little buns with it to make them shine and sparkle with some sesame or poppy seeds.


Bake the buns for 15min and let them cool down on an oven rack. Enjoy with veggies burgers, butter and jam, mustard and sauerkraut...

  • 2 eggs
  • 320g de farine
  • 125g butter at room temperature (seems a lot but it's normal )
  • 10cl warm milk
  • 12g fresh yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 1 egg (to make the top of the bun shine)
  • some sesame or poppy seeds seeds
