How to make

There's nothing like it for getting back on track for the new year! It’s comforting, flavorful and packed with lots of healthy nutrients. Turmeric, whether it’s fresh or ground, is used in Ayurveda to calm, soothe and basically aid the whole body in balancing and healing itself. Fresh ginger is an amazing immune-boosting as it makes us feel warm, wholesome and nourished. Shiitake mushrooms, kombu, garlic, ginger and turmeric are the stars of this restorative broth, infusing it with both deep flavor and immune boosting and healing properties. This delicious broth is a wintertime recipe after the holiday excesses and the unavoidable runny noses, itchy throats and fatigue. Your body will be hydrated, remineralized and alkalized. 


METHOD : 


Coarsely chop the vegetables into pieces. 


Place all the ingredients into an iron cast or a slow cooker, cover and cook for at least 2 hours but if you have time, set on an even lower heat and slow cook for 5-6 hours. Strain and enjoy this deliciousness.


#ZEROWAST TIP : Reuse your vegetables by adding some water a second time, blend and enjoy a nice soup.

Ingredients

  • 1 leek (use white and green parts)

  •  1 red onion 

  • 3 carrots

  •  3 stalks of celery

  •  3 whole cloves of garlic, crushed 

  • 100g of shiitake mushrooms 

  • 1 large piece of kombu (seaweed) 

  • 2 inch piece of fresh ginger 

  • 2 inch piece of fresh turmeric (or ½ tsp of ground if you don't find some fresh)

  •  1 handful fresh herbs like parsley, thym, rosemary, sage 

  • 1 tbsp unrefined sea salt

  •  Some black peppercorn 

  • 2 liters of filtered water 

  • 1 tbsp cold pressed olive oil
